Zuppa Inglese
(English soup: vanilla cream with boudoir biscuits)

A cold desert with a rather delicate and long preparation time due to cooling.
The name sounds English, but this is a traditional Italian desert and a particular favourite of the Medicis. However, in those days the English loved this dish as much as the Florentines, and hence the name.

Ingredients for 4:

  • 150 ml milk
  • 200 ml Kimbo espresso
  • 1 pack of vanilla sugar
  • 4 egg yolks
  • 50 g sugar
  • salt
  • 100 ml liqueur
  • 400 g boudoir biscuits

Preparation:

  • Bring the milk, Kimbo espresso and vanilla sugar to the boil and leave to rest for 30 minutes.
  • Stir the sugar through the egg yolks just until it has dissolved and then stir in a pinch of salt.
  • Heat the egg mixture and add the milk a little at a time while stirring until the cream stiffens.
  • Dilute the liqueur in a little water and drizzle over the boudoir biscuits.
  • Place the cream and boudoir biscuits in alternate layers in a dish. Leave the desert in a cool place for 2 hours and garnish with a few mint leaves.
